Tamales with Pablo
I’ve made tamales before. Pablo taught me and I’ve made them with Cindy Ripley aka Luna Garcia. But I didn’t know how to do it by myself and I wanted to know from start to finish. So I asked Pablo if he would teach a class at my house and he agreed. Pablo is an electrician (DLR.com) who moonlights as a cook or maybe he’s a cook who moonlights as an electrician. . .. In any event he’s an excellent cook and he makes out of this world tamales. We all flock to his house when tamales are announced. We got together early on Saturday morning with my friend Suzanne (see photos) and Pablo took us to his hometown of Boyle Heights for a tour. We went to his favorite breakfast spot and just missed a huge line out the door. We went to the bakery. We went to a beautiful church. We passed his school. We went to Mariachi Plaza. We went to the Masa Shop! We came home and made tamales.
We soaked the husks, we patted in the masa, we filled it with fillings (Pablo and I made the fillings the night before) – three kinds: 1) Beef and pork with chipotle; 2) chicken with chipotle; 3) chile cheese and then I made some with just chile for me. I made quacachile to go with it. We also bought some salsa at the Masa Shop. We cooked a bunch of tamales and ate them.
We made tamales all afternoon. I recruited a couple of my neighbors to help because it was overwhelming the quantity of tamales that needed to be made. It was a blast. The music was going. Good conversation. Good laughs. Some beer. Everyone left with bags and bags of tamales ready to be cooked or frozen. Here are the photos:
