Zucchini. I am ambivalent about my relationship with zucchini. I want it to be a special relationship but it’s not really. Zucchini is just kind of blah. Water and tasteless squash. But it’s pretty and I keep wanting to make things with it. I just keep trying and trying and trying. My most recent attempt at improving our relationship was tonight. This is what I did. . ..
A bunch of smallish zucchini or zucchini of any size.
Olive oil – a couple tablespoons
½ cup of grated or shredded parmesan cheese
½ cup of bread crumbs salt and pepper
Preheat oven to 450° Oil or spray oil a baking sheet
Cut the zucchini into 1/4 “ circles
Mix the zucchini in a bowl with the tablespoon or two of olive oil
Mix the parmesan cheese and breadcrumbs and salt and pepper together in another bowl.
Dip each zucchini circle in the cheese mixture and place on the baking sheet.
Bake for about 15-20 minutes or less if they’re done more quickly.
